Before the main preparation of Asun
- Cut meat with the skin into tiny bites and rinse to get rid of sand or dirt.
- Pound or grind peppers coarsely and set aside.
- Chop one part of onion into tiny pieces and the other part into rings and place in different bowls.
- Crush seasoning cubes and set aside.
- Cut the bell peppers into nice shapes and keep for later use.
Asun/peppered goat meat ingredients
- 1 kg of goat meat (with the skin on)
- 6 scotch bonnet peppers or as desired
- 2 red bell peppers
- 3 green bell peppers
- 2 medium onions
- 3 goat meat seasoning cubes (Knorr cubes)
- 3 cloves of garlic, optional
- Cooking oil for frying of the meat
- Salt to taste
Steps on how to prepare Asun (spicy peppered goat meat)
- Season goat meat with chopped onions, salt, garlic, pepper, 1-2 goat meat seasoning and mix to coat very well.
- Cover and place the meat in the fridge to marinate for 40 minutes to absorb the seasoning.
- Bring the meat out of the fridge and place in the pot to cook for few minutes without adding water to intensify the smoky flavour.
- After 5 minutes, add a little water to cook the meat until it is tender and the liquid begins to dry.
- Place a pan on heat and add cooking oil to it, add the meat to the oil and fry until they are golden. Remove from the oil and set aside.
- If you are using the oven, place the meat in the oven rack and grill, turn it occasionally until it is light brown but not so dry.
- Place another pan on heat, add about 2 tablespoons of oil to it, add the coarsely pounded pepper, chopped onions and stir-fry for 1 minute.
- Season the pepper sauce with some goat meat seasoning, salt and stir- fry for 1 minutetill you perceive a nice fragrance.
- Add the chopped red and green bell peppers to the sauce and stir-fry for 1 minute, if it appears dry, add about 3 tablespoons of the meat stock to adjust the consistency.
- Return the grilled/fried goat meat to the sauce and stir until the meat is completely immersed in the pepper sauce. Garnish the meat with few slices of onion rings and cook for 2 minutes.
- Asun is ready, serve warm or pair with fried plantain or jollof rice.
