I can still say this over and over, this macaroni recipe is indeed a mouth-watering meal; it is meaty, spicy and filled with healthy vegetables like tomatoes, carrots, bell peppers, green beans. All these combinations make it a perfect healthy macaroni meal and not just that, but the addition of different spices like onions, ginger, thyme, curry, nutmeg and garlic salt in oil, helps to enhance other ingredients and in turn, creates an unforgettable aroma making it even tastier. With every bite of this, you’ll get a nice beefy flavour filled with crunchy vegetables as well.

Instead of preparing a very bland macaroni dish, always try to enrich your plate of macaroni with any available vegetable; even if it means you have just limited ingredients, stick to that and make sure you season it to your taste; you can even add beef broth to your macaroni to enhance the taste as well. I love to use scotch bonnets because they are very spicy and have nice flavour as well, you can use any kind of pepper, provided it is spicy and its what you want. The first step in cooking a perfect beef macaroni is choosing the right cut of beef. You want to use that very tender part which has less fat. If you don’t want to use beef for this recipe you can replace that with cheese or use both or you can also use shredded chicken to make it, you may also do this in mac and cheese. Beef Macaroni Ingredients

  • 500g elbow or twist macaroni
  • About 500g beef or ground beef
  • 5 pieces ripe tomatoes, diced
  • 3 red bell peppers (chopped) and 3 yellow peppers (ground)
  • 2 green bell peppers, chopped
  • 1/4 cup vegetable oil
  • 1/2 cup green beans, chopped
  • 3 medium carrots, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • Small size garlic, mashed
  • A teaspoon of ground nutmeg (optional)
  • 2 tablespoons ground crayfish (optional)
  • Seasoning cubes and salt to taste

Directions on how to make beef macaroni with vegetables

  1. Season beef with onions, 1 seasoning cube, garlic, pepper and salt and cook until it is tender.
  2. Once the beef is tender, drain from the broth and cut all into tiny pieces on a flat surface.
  3. Heat up vegetable oil in a skillet, fry the beef until they are golden, and set aside.
  4. Cook the macaroni for 5-10 minutes or according to package directions drain and set aside.
  5. Heat up 4 tablespoons of oil in a skillet; add garlic, ginger, onions and saut for 30 seconds.
  6. Bring in the diced tomatoes and the blended pepper and stir-fry for 10 minutes.
  7. Add the bell peppers, carrots, and green beans, let this cook for 5 minutes on a medium heat.
  8. Season the mixture with thyme, curry and a seasoning cube, stir and taste for salt
  9. You will notice the content becoming very thick and rich add about cup of beef broth or water and stir.
  10. Let it simmer gently on a medium heat, bring in the fried beef followed by the boiled macaroni and stir the content properly to incorporate.
  11. Reduce heat and leave the macaroni to cook on a very low heat for 5 minutes or until it has absorbed all the ingredients and the liquid has dried too.
  12. Serve your beef macaroni with chilled juice or as you want.
